I never tried out making chips with sweet potato until i crossed at my wonderful buddy Aparna's Aps Kitchen, i got hooked immediately to this chips which i tried out during this weekend, we loved this mildly sweet and crispy chips, we couldnt stop munching them, they were quite addictive and tastes fabulous.. A wonderful crispy snacks to enjoy with a cup of tea. Aparna used coconut oil for frying these chips which i completely skipped and used chilly powder and salt to spice up the chips...If you are searching for that vibrant orange coloured chips, sorry friends coz i used the mild yellow colour sweet potato for making this chips which i get very much often from nearby Chinese stores..Thanks to Aps for sharing this wonderful chips, we loved it very much...
2nos Sweet potatoes (peeled & sliced thinly)
Oil for frying
Red chilly powder (as per need)
Salt
Wash the sliced sweet potatoes and spread them for few minutes over a kitchen towel, heat enough oil, drop gently the slices one by one and fry until they turns crispy, remove the chips from oil and add the red chilly powder and salt, give a quick toss and continue frying the remaining uncooked chips..
Conserve in a air tightened box and enjoy munching..

I luv this a lot. Coimbatore is famous for this chips and I munch in plenty. It has a lots of starch though.
