Apart from onion,cucumber and carrot raita, i rarely make raitas with different veggies, its was too hot yesterday and i prepared simply pulao with veggies in pressure cooker and prepared this delicious,healthy broccoli raita to serve along with veggies pulao....Yogurt drunken broccoli florets tastes super fabulous and this raita gets ready truly very quickly within few minutes, since my family have picky eaters i cooked those florets until they turn bit soft and combined them with beaten yogurt and tempered it with usual spices...If you can eat raw broccolis, u can very well grate them to make raitas..As broccolis are highly rich in antioxidants,dont overcook the florets else they will lose their vitamins and antioxidants..Sending to Kurinji's HRH-Healthy Summer..
1cup Broccoli florets
2cup Yogurt
1tsp Mustard seeds+urad dal
2nos Dry red chillies
A pinch Asafoetida powder
Salt
Oil
Cook the broccoli florets in hot water until they turns bit soft,strain the water and keep aside, meanwhile heat a pan with oil,let splutters the mustard seeds,urad dal,fry the asafoetida powder,dry red chillies until they turns brown,add this tempered spices,salt,cooked broccoli florets to the yogurt.Mix everything well and serve along with pulao or briyanis..
