Its a peek season here for fresh green peas and i couldnt stop myself to get them from my nearby farmer's market, after making some pulao with those fresh green peas, there were some leftover sitting silently in my fridge since two days..While going through my fridge, i got few brinjals and immediately i wanted to make some curry by combining brinjals and green peas together and used some leftover spice powder which i prepared while making Okra Sukka to spice up this easy breezy curry..This simple and quick curry tastes fabulous when served along with curd rice, both together turned out our yesterday's lunch super prefect and yummy...
1/2kg Brinjals (chopped)
1cup Fresh green peas
1no Onion (large & chopped)
1no Tomato (large & chopped)
5nos Garlic cloves (crushed)
1/2tsp Sambar powder
1tsp Sukka Spice powder
Salt
Few curry leaves
Salt
1tsp Mustard seeds+Cumin seeds
Oil
Heat enough oil, lets crack the mustard seeds and cumin seeds with curry leaves, add the chopped onions, chopped tomatoes, crushed garlic cloves and saute until the veggies turns mushy, add the green peas with salt, cook for few seconds..Now add the chopped brinjals, saute for few minutes, finally add the sambar powder, sukka spice powder, springle some water and cook with lid for 5 minutes, remove the lid and cook for another few minutes until the oil gets separates..
Serve hot with rice..
