I rarely prepare vegan bakes, after a long hesitation i wanted to make some vegan muffins specially for me,as i dont eat kiwi coz of my allergy...I prepared a simple kiwi puree by grinding the kiwi flesh along with silkened tofu usually used for making vegan desserts or bakes...Cornmeal added in this muffins gives a wonderful texture and turned out this muffins super prefect and delicious...We loved these muffins,i enjoyed with a cup of tea while my kids with their chocolate drink for our snacks, even my H loved this vegan muffins..Needless to say these muffins are guilt free coz its completely butter free,egg free also vegan..
1+1/2cups All purpose flour
1/2cup Cornmeal
1/2cup Silken tofu
1/2cup Hot water
4nos Kiwi (peeled and chopped)
1cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1/2cup Canola or Sunflower oil
1tsp Vanilla extract
Preheat the oven to 350F..Sieve the all purpose flour along with baking powder and baking soda..Now add the cornmeal to the sieved flour,keep aside..Whisk together the oil,sugar,vanilla extract until the oil gets mixed..meanwhile make a puree with kiwi and silken tofu, add this puree to the sugar-oil mixture and beat until everything get well mixed..Finally add the flour-cornmeal mixture and hot water, mix everything well with a spatula,dont overmix the muffin batter..
Pour the muffin batter to the silicon muffin mould,bake for 15-20minutes until a skewer inserted comes out clean..
