Microwave cooking makes the life easier, hope many of us will be totally agree with me, i cook atleast few foods through microwave oven whenever i feel like lazy to cook up dishes or else if am busy with household stuffs, coz they doesnt need our continous attention...Sterday for our lunch i tried making this delicious pulao using microwave oven with mushrooms and soyachunks cooked in tomato paste with our spices...Its quite a simple pulao eventhough its tastes fabulous with raitas or papads...This rice dish is quite a fabulous one pot meal prefect for both lunch box menu or lunch, we enjoyed a lot for our lunch with papads..Sending this pulao to Srivalli's MEC-Rice Dishes gusted hosted by Priya& to Kiran's CWF-Tomato guest hosted by Sanyukta..
2cups Rice (soaked for 15mins)
1cup Coconut milk
2cups Water
Salt
For pulao:
1/2cup Mushrooms (chopped)
1cup Soyachunks
2nos Onions(chopped finely)
1tsp Ginger garlic paste
1/2cup Tomato paste or fresh juicy tomatoes
1/2tsp Garam masala powder
1tsp Coriander powder
3nos Green chillies (slit opened)
1tsp Cumin seeds
Oil
Few mint leaves
Take the soaked rice, coconut milk,water and salt in a microwave safe bowl and cook for 20-25minutes in high power, once the rice gets cooked, keep aside and let them cool..
Now in an another microwave safe bowl,add enough oil and cumin seeds,cook for 2minutes in high until the cumin seeds gets fried, add immediately the chopped onions,slit opened green chillies, ginger garlic paste,tomato paste and cook in high power for 5 minutes, meanwhile take the soya chunks in enough water in a bowl and cook for 2minutes in microwave oven until they double their volume..take the soyachunks out and drain the excess of water..Now add the cooked soyachunks,chopped mushrooms,garam masala powder, coriander powder,chopped mint leaves to the already cooked veggies,cook again everything in high power for 10-15minutes until the veggies gets well cooked and the oil gets separates...Now add the already cooked rice,gently toss them and cook for 2-3 minutes in microwave oven..
Enjoy with raitas or papads..

Fantastic rice preparation. I have never tried coconut milk in rice preparation,but it makes complete sense these days,I love coconut milk and I can bet how good it will taste in the rice when it beldns with all the other ingredients:) Loved the soy chunks and mushroom combination too:)!!!
