500grms Broccoli florets(chopped)
1no Onions(chopped)
2nos Potatoes (cubed)
2cups Vegetable stock water
Salt
Pepper powder
Olive oil
1/4cup Thick coconut milk
Few red chilly flakes
Heat enough olive oil, saute the chopped onions until they turns transculent, add the chopped broccoli florets ,cubed potatoes and saute for few minutes, add the vegetable stock water with salt and pepper powder..cook everything until the veggies get cooked..Blend the cooked veggies along with thick coconut milk and serve immediately topped with few red chilly flakes..
Enjoy warm!!

ReplyDeleteI made broccoli soups, rather I made lot of soups during winter!!, never posted any of them!!, I did not add coconut, I try to avoid coconut as much as possible, too much cholesterol, I will enjoy looking at your soup!!, lovely click, and brocolli is my favourite.
ReplyDeleteWhat a novel idea to add coconut milk. You should tell your friend Jayasri (the one who has left a comment above) that eating coconut once in a while does no harm to the body. Its only when you deprive it of essentials that the nutrition factor is bad!
