Fried rice in microwave oven, yea its really very much possible which i realized it today when i cooked this delicious carrot and spinach fried rice for our lunch, which is quite impossible and not evident to make out in microwave oven for me before few months back..I do almost many dishes through microwave oven since i was very much interested in preparing my entries for Microwave Easy Cooking, famous event by Srivalli..My H bought a bunch of fresh spinach from farmer's market today and they really very greeny, i dont want to prepare as gravies but something different as fried rice, i prepared this delicious fried rice with a cup of finely chopped carrots and the dark soya sauce i used in this dish gave a gorgeous and very pleasant colour to this dish instead of green rice..Cooking greens in micorwave oven retains their green colour also they get cooked very easily..This rice dish took 20minutes for cooking rice and 15 minutes for turning them as delicious fried rice.
2cups Basmati rice+3 1/2cups of water (cooked with 1tbsp of oil in microwave oven for 20 minutes)
1cup Carrots chopped
1cup Spinach green (chopped finely)
1tsp Ginger pieces (minced)
1tsp Garlic pieces (minced)
1tbsp Dark soya sauce
1tbsp Chilli Sauce
1tbsp Tomato ketchup
2nos Green Spring onions (chopped)
1/2tsp Pepper powder
1/4tsp White pepper powder
Salt as per need
2tbsp Sesame Oil
Heat the sesame oil, minced ginger and minced garlic pieces in a microwave safe bowl for 5 minutes in high..add the chopped carrots with soyasauce, chilli sauce, tomato ketchup and cook again for 5 minutes..add the chopped spinach, pepper powder and salt (if needed) , give a stir and cook for 2minutes, dont cook the spinach much, try to keep a bit tender..Take the bowl from the microwave oven, add the already cooked rice and white pepper powder, toss everything gently..now add the finely chopped green spring onions and cook for 2 minutes again in microwave oven..
Serve hot with papads or boiled eggs..
