Last month, i was unable to participate Sweet and Simple Bakes a monthly bake event, this month i dont want to miss this delicious cookies..we enjoyed having these cookies with oatmeal and chocolate chips, my favourite cookies... i prepared these cookies sterday, i followed the original recipe step by step but the dough turned sticky so i made few changes, by adding more flour n rolled oats while rolling the dough also i have added raisins n chopped walnuts with chocolate chips to make these healthy cookies, needless to say that this delicious cookies are really very tasty n healthy..
1/2cup Butter
1/2cup Sugar
1/2cup Brown sugar
1no Egg
2+1/2cup Rolled Oats
1+1/2cup Self raising flour
2tbsp Water
1tsp Salt
1tsp Vanilla extract
1/4cup Chocolate chips
1/4cup Raisins
1/4cup Walnut pieces
Preheat the oven to 180c r 350F.
Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugars and beat until the mixture is light and fluffy. Add the egg, water and vanilla extract while still beating. Reduce the speed and gently mix in the oats, flour, salt and raisins to form a dough. Using your hands, roll the dough into walnut sized balls ( but i rolled a bit big) and place slightly apart on two baking trays. Bake in the oven for 12-25 minutes or until light golden brown but still slightly soft in the centre. Allow to cool on the trays for a minute before transferring to a wire rack to cool.
