Ridge gourd is low in saturated fat and cholesterol, high in dietary fibre, vitamin C , riboflavin, zinc, iron, magnesium and manganese..the nutritional value of gourd makes it suitable for maintaining health like weight lose...this is typical countryside curry prepared by my grandma, she used to add grounded peanuts to the curries while using bottlegourd n ridge gourd..i tried my grandma's version of making curry with ridge gourd and peanuts..here is the recipe...
2cups Ridge gourd pieces
1/4tsp Mustard seeds
2nos Dry red chillies
1/4cup Grounded peanuts
Curry leaves
Salt
Oil
Heat oil in a kadai, add the mustard seeds,curry leaves n dry red chillies n let them crack..add the ridge gourd pieces n stir them for while..add enough salt to the veggies, now they will leave water n close the kadai, cook in medium high flame until they get well cooked..before putting off the stove, add the grounded peanuts to the cooked ridgegourd curry n toss gently until they get well mixed..
Goes awesome with hot rice.

Wish you a very Happy New Year! I like ridge gourd and love peanuts -great idea to combine both! I just happened to buy ridge gourd yesterday. The ones you get in aussie seem to be huge - a foot or more in length, and 2 - 2.5 inches in diametre, and they are called sin quai!!
