Navatan pulao, my entry for RCI - Awadhi Cuisine host by Siri of Siri's Corner , event started by Lakshmi..Awadhi cuisine is completely new to me, never heard about this awesome cuisine, need to say thanks to both Lakshmi n Siri for this event...i saw this pulao recipe here n changed certain things as per my taste.. this pulao tastes really awesome n great, we enjoyed this pulao much..with plenty of vegetables no doubt this pulao is really healthy n tasty!!!
2cups Basmati Rice
2cups Mixed vegetables
1/4cup Paneer cubes
5nos Cashews ( chopped)
1no Onion (sliced)
1no Whole Spices
1tsp Shah jeera
1tbsp Raisins
1/4tsp Saffron + pinch of food colour
1tsp Ginger paste
1tsp Garlic paste
2nos Green chillies
1cup Curd
1tsp Garam masala
1tsp Chilly powder
1bunch Mint leaves
Salt
Ghee+oil as per need
Wash n soak rice for 30 minutes...Cook the rice with 3 cups of water with 1tbsp of oil, grains should be seperate...meanwhile heat 1tsp of ghee n fry the paneer cubes for few minutes, keep aside..Take a large pan, add the ghee n oil n fry the whole spices n shah jeera until they turn brown, add the onion n fry well..Now mix the vegetables, green chillies, mint leaves, ginger garlic paste , cashews n raisins n fry everything well for few minutes, add the chilli powder, saffron,curd, garam masala n salt..again fry everything for a while (until the water evaporates)..now mix the prepared curry to the cooked rice n mix well...
Squeeze the lemon juice on dish.. Garnish the pulao with mint leaves n serve!!
