I love sambhar with vegetables r without vegetables..some use specific vegetables to prepare sambhar, i do the same too..but sterday i tried out sambhar with all vegetables from my fridge n also with all the vegetables laying in my vegetable basket like broccoli,jackfruit seeds, greenpeas,carrots, zucchini, drumsticks,eggplant, chayote etc...they looks like kootu with colourful vegetables..they tastes excellent n flavoursome coz of all those vitamin packed vegetables...healthy for everyone..
2cups Mixed Vegetables
1cup Cooked Toor dhal
1no Onion chopped
1no Tomato chopped
1tbsp Lemon juice
1tsp Mustard seed, urad dal
1/4tsp Asafoetida powder
2nos Dry red chillies
1/2tsp Red chilli powder
1/2tsp Coriander powder
5nos Curry leaves
Salt
Oil for tempering
Heat oil in a pan, add the mustard seeds, urad dhal, red chillies n asafoetida powder n let them splutters...add the chopped onions, curry leaves n chopped tomatoes n stir them until they turns mushy..add the mixed vegetabes to the pan n stir for a while with enough salt...add enough water to the already cooked toor dhal, add now red chilly powder, coriander powder to the dhal n add them to cooking veggies...bring them to boil n cook until the vegetables get well cooked..
Add the lemon juice to the sambar n put off the stove, garnish with chopped coriander leaves..Serve them hot with rice, idlies r dosais...
