Greengrams r full of proteins, if they r sprouted no doubt they will be very healthy..tried it out as idlies with sprouted moongdal, just to give a change to our usual idlies..healthy, steamed, soft Idlies.. real dinner r breakfast with plenty of proteins..just start sprouting green gram three days before....
1cup Idli rice
1/2cup Urad dal
1/2 cup Sprouted green gram
1/2 cup Raw rice r Poha
For Tempering:
1/2tsp Mustard seeds
1/2 tsp Urad dal
1/2 tsp Channa dal
10 nos Cashew nut pieces (optional)
Oil for tempering
Soak separately Idli rice, urad dal n raw rice for atleast 6 hours..grind coarsely urad dal with a half cup of water n add the sprouted moongdal with the urad dal n grind finely to get a fluffy batter ..take off from the grinder, now grind idli rice with raw rice slightly coarsely..
Dont use more water, try to grind them with one cup of water, batter should be very thick.. add salt as per taste n keep them for fermentation for a night, next day u may see the batter would have doubled their initial volume...while making idli, heat oil in a tawa, add the mustard seeds, urad dal n channa dal, cashews n let them splutters, add this to the idli batter..
Grease the idli plates with oil, take a ladle full of idli batter, pour them in idli plates..cook them in idli cooker r pressure cooker for 10 minutes...take off the idlies from the plates, serve hot with any choice of chutney..
Healthy, soft n delicious Moongdal idlies r ready!!!!!!!!!!
