Carrot N Leeks Soup

Leeks are vegetables that are closely associated with onions and garlic. The leaf of a leek would form a light green, tight cylinder of sheaths. These may be used in cooking to prepare soups and salads. They may be eaten raw or cooked.The lower leaf portion and bulb of one cup of boiled leeks would provide the body with 38 calories, 9 grams of carbohydrates, 1 gram of protein and 12 milligrams of sodium.The orange-colored taproot of the carrot contains a high concentration of beta-carotene. Beta-carotene is a substance that is converted to vitamin A in the human body.Beta-carotene is also a powerful antioxidant effective in fighting against some forms of cancer, especially lung cancer. Current research suggests that it may also protect against stroke, and heart disease.Carrots are also a very good source of dietary fiber, vitamin C, vitamin K, folate and manganese, and a good source of vitamin B6, pantothenic acid, iron, potassium and copper. This colourful soup is quite easy to prepare, healthy as well as delicious...


1cup Carrots chopped
1cup Leeks chopped
1cup Potato chopped
1no Onion chopped
5nos Garlic pods
1nos Vegetable stock cube
1/2tsp Cinnamon powder
1/2tsp Nutmeg powder
1/4tsp Cumin seed powder
1/2tsp Pepper powder
1tbsp Olive oil
Salt


Heat the olive oil in a pressure cooker, add the chopped onion , garlic pods n fry them until they turns transculent, add the carrots, leeks n potatoes pieces to the onion..stir them for few minutes, once the veggies r half cooked add the spice powders with enough salt n add enough water..

Bring them to boil, close the cooker with  lid, put the weight n pressure cook them upto 3 hisses...keep aside let them cool..


Blend them with a hand blende r with a food processor bit coarsely.. Serve them hot with bread slices...

Delicious Soup!!!Kids will love it..

  1. Thick soup....absolutely love slurping it..;-).carrots give such a nice,subtle flavor to the soup...havent tried with leeks though...yummy yummy!!

  12. GKB, definitely u can use the green part of leeks, i usually use the tender green parts that too for soup..hope this helps..
