French desserts/pastries are quite popular around the world and their pastries are seriously a must try if you have a chance to visit this beautiful country. I must say that am lucky enough to live in this country since 23 years. Obviously French desserts are my favourite. Now i try to replicate them at home whenever i get a chance to dish them out by myself. Though some of the French pastries are seriously hard to learn and cook at home, few pastries are quite easy to prepare. I have been dishing out some of the easiest French pastries since a long, and thank god till now everyone at home approved that my French Pastries are best and tastes very much like the store bought ones. Whatelse we need, however i learned baking myself and am proud to say that all my French pastries never went wrong.
Am running this week's blogging marathon with ' Cook by Capital' as theme. And i loved this theme very much. This theme asks to pick a letter and choose three different countries capitals. Obviously i picked 'P'. Paris, is the capital of France, which is very much close to my heart. And here comes one of our family favourite aka Parisian Flan. Flan is a French custard pie which calls for basic ingredients, this tremendous pie is best to eat after a meal. Easy to bake, this tart au flan Parisien have its own place among our favourite French pastries. Custard pie can be made with or without pastry sheets like either shortbread pastry sheet or puff pastry sheet. And my today's Tarte au flan calls for shortbread pastry sheet which makes this pie more interesting with a fabulous crust. Kids enjoyed thoroughly and we loved it.

1+1/2 cup All purpose flour
1/2cup Butter
1/2cup Confectioner's Sugar
1 Egg
1tsp Vanilla extract
Take the flour, butter, confectioner's sugar, egg, vanilla extract in a bowl.
Add the softened butter and with your finger tips, turn the mixture as soft dough.
Keep the dough in fridge for an hour.
Dust the dough and roll as a round shaped disc, transfer the disc to a tart pan.
For Flan:
2cups Milk
1cup Cream
4 Egg yolks
1 Egg
1cup Sugar
1/4cup Cornstarch
Bring the milk, cream to boil with sugar.
Meanwhile, beat the egg yolks, egg in a bowl well. Add the cornstarch to the egg.
Mix well. Once the sugar gets dissolves, add the hot milk to the egg mixture.
Transfer the egg-hotmilk mixture again to the sauce pan, and cook in simmer until the mixture turns semi thick.
Put off the stove.
Preheat the oven to 400F.
Pour this thick custard to the already prepared shortbread pastry sheet. Arrange in oven and bake for 30-35 minutes.
Remove the baked flan and let it cool completely.
Wrap it and arrange in fridge for two hours or for overnight.
Slice and enjoy.

Flan looks amazing is always a pleasure when family loves whatever we dish out from our kitchen and home bakery :)
Beautiful pie Priya. I love the technique in French cooking and I love to recreate them at home. This version of custard pie looks fantastic. So much yolks must give it such a creamy texture.

Do you pre bake crust before adding custard.
