I have been baking with fine semolina since few weeks as am able to make some incredible breads with them. Working with semolina is not a tough job as they tends to work as much as like bread or all purpose flour. Fine quality semolina are just prefect to bake many tremendous breads out of them. Moroccan, Tunisian and Algerian uses Semolina as the main ingredients in most of their flatbreads or leavened breads. Since my family members like the texture and the flavor of semolina breads or bread rolls, i couldnt stop myself to make some simple bread rolls at home just to please some hungry tummies either for breakfast or for evening snacks after a hectic day at school. These bread rolls came out extremely spongy and ultimately delicious eventhough this bread rolls are completely eggfree.
I always feel comfortable to roll my bread dough as bread rolls rather than a loaf, yes its quite easy to roll bread rolls and drop them in a greased pan than rolling them prefectly as a loaf. However you can still roll this semolina bread rolls as a single bread loaf as well. With usual ingredients, one can bake out this semolina rolls with less efforts. Once baked, just pull a bread rolls and have with your favourite spreads or butter to please your tastebuds. I enjoyed baking this simple, yet a spongy and eggless semolina bread rolls for our Sunday breakfast few days back. To bake some freshly baked bread rolls for your breakfast, dont hesitate a second to prepare your bread dough before a day and conserve them in fridge, this helps a lot, once the dough comes to room temperature, you can bake your bread without any hassles. And this bread rolls is going to Bake-a-thon, a baking event am running on Mondays, Wednesdays and Fridays of this month of December.
2cups Semolina (fine quality)
1+1/2cups All purpose flour+2tbsp Flour for dusting
1tbsp Sugar
1tbsp Salt
1tbsp Instant yeast
3tbsp Butter
1+1/2cups Luke Warm water
Milk for brushing
Take the semolina, all purpose flour in a large vessel, add the yeast, sugar and water.
Add the oil and luke warm water to the flour and mix everything well with ur fingers..
Turn everything as dough, dust the dough with flour and knead the dough.
The dough must be soft but not sticky, knead them for 10 minutes, put the soft dough in a greased bowl and arrange the bowl in a warm place for an hour.
After an hour, knead the dough,dust with all purpose flour and divide them 10-12 medium sized balls.

Knead the balls one by one, flatten them with your palms and roll them as round balls.
Arrange the rolls in a greased square baking tray.Keep aside for half an hour.
Brush the dinner rolls with milk.
Preheat the oven to 350F.
Bake the dinner rolls for 25-30minutes until the crust turns golden brown..
Enjoy this dinner rolls with your favourite spread.

Semolina nuns are new to me Priya, they look so soft and fluffy. Will have to try these sometimes. Must have tasted great with Nutella.
