We are having a week of fall season holidays here, obviously i have to plan everything for a week to bake or cook for my blog baby. Trust me, all my plans went as much as good and i have baked couple of cakes, cookies and breads during my stay at home. Needless to say,my family members were enjoying all the bakes i have baked out for their snacks to desserts. Nothing can beat the freshly baked homemade cakes & bakes rite. Usually i bake only during weekends, coz of my busy professional life. Rite now its fall season here, you might know how the day light will be. Once we enter the home, i dont feel like baking or cooking as the weather makes me lazy and tired. But a week of holidays is definitely worth and fruitful as a blogger. Kids enjoyed their mom's bakes without any fuss,we keep ourself away from the store bought cookies or breads since a week. One among those bakes is this tray cake, this cake calls for finely chopped dates, homemade dates syrup, roughly chopped chocolate chunks as main ingredients along with usual ingredients we usually goes for making a cake. This cake is butterless, sugarless but not eggless.
If you want to bake this cake as eggless, dont forget to substitute eggs with either silken tofu, grounded flax seed meal or else simply with yogurt or curd. Not to forget that even thick dates puree also works awesome to replace the eggs in this cake. Recently hubby got a box of Algerian dates from his collegues who carried all the way from Algeria, those dates are seriously fabulous with mild sweetness with chewy texture. After having few, i seriously want to bake a cake or cookies with. And finally i ended up by baking this tray style cake for our evening snacks. And this Date chocolate chunks tray cake goes for this month's A-Z Recipe Challenge with the Alphabet 'D'. This Facebook challenge group is started with a new concept, yes we are going to cook with two different themes. For this month's challenge, we are cooking a dish name starts with alphabets and next month's theme is going to be Recipe swap, and vice versa.
1+1/2cups All purpose flour
3tbsp Dark Chocolate powder
2nos Eggs
1/2cup Oil
1/4cup Chocolate chunks
1/4cup Chopped dates
1/2cup Dates Syrup
1tsp Baking powder
Grease a medium sized tray and keep aside.
Preheat the oven to 350F, sieve the all purpose flour,cocao powder with baking powderand keep aside.
Beat the oil,sugar,dates syrup for few minutes, add the eggs one by one and beat everything well.
Gradually add the sieved flour to the wet ingredients, mix gently with a spatula,dont overmix the batter.
Fold in the chocolate chunks, chopped dates and pour the batter to the already greased tray and bake for 20-25minutes until a skewer inserted comes out clean..
Slice the cake as per need.
Enjoy with your favourite drink.

I've made a date bread, muffin, cookies but not a cake. I sure would love to try out your recipe as the cake looks so delicious. Anyway, date and chocolate is a wonderful combination. Wondering if I can an eggless version.

ReplyDeleteThe cake looks moist and uber delicious Priya. I have to admit here that Dates and Walnut cake was on my mind for this particular theme but had to shift to ladoos due to Diwali. I am so glad to see the combo of dates and chocolate, though!
