Bread baking is one of my favourite passtime especially when i dont have nothing to do apart from mobbing and cleaning. Havent baked bread since a long as i had a small health issue, now am doing much better. Obviously i gathered everything to bake some bread at home during the weekend. Hubby and kids were asking me to bake something as a loaf for their weekend breakfast. And i picked this Havrebrod to bake for our weekend breakfast. You might have noticed that i love baking and cooking with oats, and this Danish oat loaf tempted me to bake. Very easy to bake, you doesnt need anything special to bake out this bread.
With usual ingredients, this Danish oat loaf doesnt even need any specific cutting or carving on it. Just shape them as a boule and bake it once brushed with egg/milk mixture. Though the original recipe which i followed had an egg for the final touch, i skipped it as i felt that this Oat loaf doesnt need that egg wash. With a simple milk wash, i got the same dark brown crust in this bread. In case if you want to give an egg wash, dont forget to mix an egg with a tablespoon of milk to brush the top before baking this Danish oat loaf.

3cups Bread flour
1cup Uncooked rolled oats
1cup Milk
75grms Butter
1/4cup Light brown sugar
1tsp Salt
1+1/2tbsp Instant yeast
2 tablespoons milk
Water (for kneading)
Few rolled oats (for sprinkling)
Heat the milk in a pan, add the rolled oats, sugar, butter, salt, mix well and keep aside.
Now take the flour, yeast, oat-milk mixture in a large bowl.
Add the lukewarm water and knead everything well until the dough turns soft.
Dust the flour on the work surface and knead dough until smooth and elastic.
Grease a bowl and drop the dough in it, wrap it and let the dough sit for two hours in a warm place.
Once the dough doubled the volume, punch the dough. Divide the dough as two equal pieces.
Shape the dough as a round loaf by tucking and sealing the edges to create a smooth top. Place this loaf in a baking tray lined on a baking sheet.
Let the dough sit for half an hour in a warm place.
Preheat oven to 350F.
Brush the milk mixture on the top of the loaves. Sprinkle some oats on the top.
Bake for 25-30 minutes until the bread turns golden on top.
Let the bread gets cool completely, slice the bread.
Enjoy with your favourite spread.

Bread looks good with oats on the top and the bread got noice brown color even without a egg wash. A nice bread to have for a weekend breakfast.

Unpronounceable bread :D I have had time pronouncing some recipe names especially when it is coming from you aks, because they are always something new .. How well the bread has browned and how nice it looks with the oats sprinkled on the top .. Milk wash is always my favorite, I even try to ask bakery people specifically if they did milk wash or egg wash ..That is an amazing bread , looks so soft from the inside..
