Simple to make my today's post is inspired from Harini's post, though i have posted already vegetable pongal, this post is different from my version. As much as like usual venpongal, this mixed vegetable pongal takes very less time and quick to prepare. A complete, nutritious breakfast dish to enjoy with your favourite side dish or else with chutneys. Prepared quickly in pressure cooker, you can finish this fantastic dish easily with less efforts. Definitely a comforting meal, we just enjoyed this pongal with spicy coconut chutney.
Very flavourful, this pongal tastes super delicious when served warm. Yes this pongal calls for green chilly and ginger paste which is completely new for me, obviously i was very curious to try this dish as soon as possible. Finally i prepared this colourful dish few days back for our dinner, however this dish definitely a satisfying meal to feed anyone easily. Am running this week's blogging marathon with Kid's delight - Quick breakfast as theme hence am posting this delicious pongal.

2cups Rice
1cup Yellow moong dal
3cups Mixed vegetables
1tbsp Ginger-green chilly paste
1/2tsp Turmeric powder
1/2tsp Cumin seeds
Salt
Pepper powder (as per need)
Few cashewnuts
3tbsp Ghee
1/2tsp Mustard seeds
1tsp Urad dal
1/4tsp Asafoetida powder
Few curry leaves
In a pressure cooker, heat a teaspoon of ghee and roast moong dal until slightly golden brown.
Meanwhile wash the rice and keep aside. Now add the washed rice, mixed vegetables, green chilly ginger paste, mixed vegetables, salt.
Add 7 cups of water to the pressure cooker.
Close the lid and pressure cook for 3 whistles.
Heat the remaining ghee and add mustard seeds, urad dal, channa dal,curry leaves and cashew nuts, fry until the cashew nuts turns golden brown.
Transfer this tempered spices, pepper powder to the cooked rice-dal mixture.
Mix well and serve it with spicy chutneys.
