Vegan Dirty Rice/Vegan Cajun Rice

Dirty rice is a traditional Cajun and Creole dish made from white rice. This dish gets a "dirty" color from being cooked with small pieces of chicken liver or giblets, green bell pepper, celery, and onion which is spiced with cajun seasoning and black pepper. Dirty rice is one of the most popular rice dish in the Creole regions of southern Louisiana, eventhough you can find them in other regions of South America as well. Dirty rice can be prepared as vegetarian and vegan version, just by replacing chicken liver or giblets with beans or with loads of varieties of vegetables.


While googling i crossed this vegan version of Dirty rice , immediately i couldnt resist to prepare this easy breezy meal with beans and vegetables though the original recipes went for eggplants. I skipped eggplants completely and replaced it with Red kidney beans along with celery stalk and carrot. Simply flavored with thyme leaves, tabasco and smoked paprika, this fantastic vegan rice will definitely please anyone's tastebuds. This gluten free Cajun rice is going for this week's blogging marathon theme, yes my theme for this week is Cuisine of USA. Though the original recipe went for a mushy rice texture i preferred mine as separate grains.

Glutenfree Vegan Dirty Rice

2cups Long grain rice
4cups Vegetable broth
1no Large onion (finely chopped)
1tbsp Garlic (minced)
1 Celery stalk (chopped)
1 Carrot (chopped)
1cup Red kidney beans (cooked)
1 Large tomato (crushed)
1tbsp Smoked paprika
1tsp Dried thyme leaves
Salt
1/2tsp Pepper powder
2tbsp Tabasco
Oil

Bring boil three cups of broth into a large pan, immediately add  the rice and cook in simmer until rice is tender.

Meanwhile, heat the oil in an another pan. Add the garlic, chopped onion and sauté until the onions turns transculent.

Add the celery, carrot, red kidney beans,salt, tomato, paprika, and thyme leaves, cook everything until the vegetables turns soft.

Add in the cooked rice and remaining cup of broth, cook everything together until the rice gets well cooked. You can add more broth to turn the rice bit mushy. But i skipped it to get prefectly cooked rice.

Add the  pepper powder, tabasco to the rice, toss everything well.

Serve warm or keep in fridge for a long to turn the rice more flavourful.

Loved it, rice recipes are hit at my home. Husband n son loved eating them while we go for short distance travel. Will check this in this week's theme.

The broth must make this rice so flavorful! I love the addition of beans.
