This week's posts are going to be Crepes, yes i picked Crepes for all time as theme for this week's blogging marathon. Crepes, these thin pastry are usually made with flour and eggs, however many versions do exists either by making with buckwheat flour (as galettes in French) or else flavored by spices or fruit peels. My today's post is a Spanish style crepes which is called Frisuelos and this crepes have their origin from Austrias and Leon, the northern regions of Spain. This crepes is a typical Spanish crepes which is flavored with lemon rinds and alcohol like cognac, rum or brandy.
Adding lemon rinds or orange rinds with alcohol to a usual crepe batter makes this Frisuelos. Since my kids love crepes very much i simply skipped the alcohol here and went with lemon rinds. If you want to prepare the typical Frisuelos dont forget to add a tablespoon of liqueur in your batter. However this crepes sounds as much as like French crepes with usual ingredients. Kids enjoyed thoroughly with their favourite nutella while i had mine with honey.

2cups All purpose flour
4 Large eggs
2 tbsp Sugar
1/4 tsp Salt
1tbsp Cognac/Rum/Brandy (i skipped it)
2tsp Lemon zest
1/2litre Milk
Butter or oil for cooking
Beat the eggs with a beater, add sugar to it and beat until they turns light.
Add the liqueur (if using), milk, salt and lemon peel and continue to beat the mixture.
Add the flour and beat well, take care while beating until no lumps forms.
Let the batter rest for an hour.
Using a paper towel, grease the pan with oil or butter.
Pour a small amount of batter and spread it well, cook in medium flame and cook on both sides.
Once the frisuelos is cooked, put it on a plate and sprinkle sugar on top.
Layer the frisuelos on top of one another until you finish with the batter.
Enjoy with your favourite spread.

The thin pastry looks extremely well made , I am loving the Honey look to these Crepes , though I would love eating these with Nutella .

That is a new one. Never heard of adding alcohol to crepes! Trust you to find such unique ones.
