One pot meals are seriously a blessing when you dont have enough time to spend in your kitchen. I just love any sort of one pot meals and my space have numerous varieties of one pot meals which can be handy at anytime of the day. Moth beans aka Matki is one among the nutritious beans which is easily available in every Indian grocery stores. Moth beans are extremely rich in proteins if they are sprouted well. However my today's recipe calls for simply soaked moth beans. Am trying to add this tiny beans in our diet quite often,one of those trials is this Biriyani. If its comes to vegetarian briyani i'll usually go for mixed vegetables biryani, but this time for a change i prepared this wonderful looking green biriyani as i want to make something different from the usual ones. This flavourful moth beans biryani calls for all the spices we usually go for making non vegetarian briyanis. Biryanis, this one pot meal suits prefectly to pack in anyone's lunch. Obviously one can carry this nutritious dish in their lunch box along with a simple side dish.

Since i used grated coconut for grinding along with the mint leaves, i cooked the rice and moth beans together in pressure cooker with yogurt and water mixture. If you want to skip the moth beans, you can prepare this same biriyani either with paneer or else with tofu.

1tbsp Ginger garlic paste

1cup Yogurt
2cups Water
2tbsp Ghee
Salt
Oil
2nos Whole spices (bay leaves,cloves, cinnamon stick & cardamoms)
To Grind:
1cup Mint leaves
3tbsp Grated coconut
5nos Green chillies
Grind all the ingredients under 'to grind' as fine paste, keep aside.
Heat the oil and ghee together in a pressure cooker, fry the bayleaves, cloves,cinnamon stick and cardamom until they turns brown.
Add immediately the sliced onions and sauté with salt until the onions turns transculent.
Now add the grounded paste, ginger-garlic paste and saute until the raw smell goes away.
Meanwhile wash the rice and soak the rice with yogurt and water,keep aside for 15minutes..
Add the garam masala, soaked moth beans to the cooking veggies, cook for few minutes.

Drain the soaked rice and add the rice soaked yogurt-water to the cooker,bring everything to boil.
Finally add the soaked rice,cook in high flame,close the cooker.
Cook upto three whistles,put off the stove.
Once the steam gets released, give a stir gently.
Serve hot with onion raita or else with a spicy side dish or chips.

Flavouring rice with mint and coconut is such a great idea. Coconut adds richness to rice dishes and this one with moth beans is surely a delicious filling meal.
