Janthikalu/Murukkulu/Chakli

Janthikalu/Murukkulu is nothing but crispy spirals which are quite known in South India. This snack food is well known for their crispiness as well as for their different varieties. Though Janthikalu/Murukkulu/ Murukku or Chakli,these crispy fried beauties have their own place for Festivals of lights aka Diwali, janthikalu can be prepared for an evening snacks, if you are lover of deep fried crispies. This festival is around the corner and Indians all around the world make some delicious sweets and savouries to share with friends and relatives especially on this day. Janthikalu is Andhra style murukku which calls for rice flour, gram flour, ajwain seeds, sesame seeds, ghee and obviously chilly powder. Yes the speciality of Andhra savouries is the addition of chilly powder as they love spiciness in their foods.

After a two months break, am kicking starting again a monthly event called Shhh Cooking Secretly event started by me, which is now hosted by Mayuri Patel. Finally i can make a dish with my secret ingredients given by my partner. And this month's partner is Poornima Porchelvan of Poornima's CookBook. She gave me Bengal gram flour/Besan and sesame seeds as two secret ingredients, as we are supposed to cook from Andhra cuisine, i cant think more than making a deep fried beauties aka Janthikalu. Thanks to Poornima for pulling to make some Andhra Style Murukku aka Murukkulu/Janthikalu. I simply loved the addition of Ajwain seeds, as i never prepared murukkus with ajwain seeds.

Janthikalu, Murukku, Diwali Murukku

1cup Gram Flour
2cups Rice flour
1tbsp Sesame seeds
1/2tsp Ajwain seeds
1tsp Chilly powder
Salt
1tbsp Ghee
Oil for deepfrying

Take the rice flour,gram flour, sesame seeds, ajwain seeds, chilly powder, ghee in a large bowl.

Gradually add the water and knead everything as a soft and stiff dough.

Heat the oil for deepfrying in a kadai.

Take a murukku press with star nozzle,pinch a small portion of the dough,drop it into the press and squeeze out as round shaped murukku in a greased flat plate.

Once the oil is hot, add the squeezed murukku.

Murukkulu, Chakli

Fry on both sides until its golden brown drain the excess of oil with paper towel.

Repeat the same process until the dough gets finished. Fry the murukkus in small batches.

Arrange in an air tight containers and enjoy.

Priya perfect spirals and this chakri with rice flour and gram flour is definitely what I'd like to try. I usually use rice flour and a bit of plain flour.
