This is not the first time am making Vadai aka crispy deep fried snacks with black-eyed peas, i have already tried this, this baked vadas and this crispy medhu vada. And my today's black-eyed peas is quite a different version from the usual ones. Adding grated carrots and chopped spinach to some grounded deskinned black-eyed peas,once deep fried makes this incredible crispy medhu vadais. Usually i dont deskin the black-eyed peas, but this time i couldnt resist to deskin them to make some crispy medhu vadas, trust me deskinning the black-eyed peas make some crispy fried dumplings. Deskinned black-eyed peas works prefect as much as like urad dal for making prefect crispy medhu vadais. Make your medhu vadais more delicious and healthy either by adding vegetables or greens in it.
Am running a month of blogging marathon with Protein rich dishes as theme, obviously i have been blogging for more than three weeks with many delicious protein rich dishes. Black eyed peas get their name from their appearance. They are cream in colour with little black spec that ressembles like an eye.Though they are named as black-eyed peas, they belongs to beans family. Some cultures considered eating black-eyed peas on a new year is a better way to start a prosperous and good luck filled new year. These beans are excellent anti inflammatory foods which are extremely good for our health.Not to forget that this beans are loaded with dietary fiber. Believed to be a native of West Africa, this beans grown in warm region throughout the world. Just a cup of cooked black-eyed peas contains 5.2grams protein. Obviously dont forget to add black eyed peas quite often in your diet.
2cups Black eyed peas
1/2cup Onions(finely chopped)
3nos Green chillies(chopped)
1/2cup Chopped spinach
1/2cup Grated carrot
1tsp Fennel seeds (crushed)
Few Curry leaves
Few Coriander leaves (chopped)
1tsp Ginger (chopped)
Salt as per taste
Oil for deepfrying
Soak the black eyed peas overnite.
Deskin the black-eyed peas and grind as smooth paste by sprinkling water, take care not to add more water.
Now add the chopped onions,chopped green chillies,salt,grated carrot, chopped spinach, chopped ginger pieces,curry leaves,crushed fennel seeds and chopped coriander leaves,mix everything well with your fingers..
Heat oil for deepfrying, take a small ball from the black eyed peas medhu vada batter, flatten them with your fingers.
Drop gently one by one to the hot oil.
Deep fry the vadas until they turn brown.
Fry everything as small batches, drain the excess of oil with a paper towel..
Serve hot with spicy chutney!

I thought you were adding black eyed peas along with urad dhal. But using only the peas for medhu vada is quite innovative. The vadas look amazing Priya..

Here in Mombasa, black eyed peas are sometimes used to make vadi dal bhajias and they turn out crispy. The carrot and spinach added Vadas are so crispy. I wish I knew how to make the vada with my hands --- with the hole. I've still got to master that skill.
