Amish cuisine is a part of Ohio and Pennsylvania states of America, and their traditional cuisine involves their home grown foods. Amish bake many varieties of baked goodies such as pie,cookies, cakes and also breads. Amish Dinner rolls are very popular as they are served in most of the Amish restaurants. These dinner rolls came out extremely fluffy, super puffy and soft. This dinner rolls calls for mashed potatoes, which gives the softness to this dinner rolls. I really loved this dinner rolls as they were extremely soft and super spongy than you can imagine and trust me these rolls are just prefect to make some ultimate sandwiches out of it. I have bookmarked this recipe from King Arthur Flour long back while i was searching for an easy breezy dinner rolls, and this dinner rolls caught my eyes immediately.
However the original recipe calls for Egg, but i skipped it as the mashed potates replace very well the egg in this excellent dinner rolls. These bread rolls stays super soft and fresh for several days even they stay at room temperature. Believe me, you wont stop yourself having this puffy beauties as these dinner rolls are extremely delicious to enjoy with your meal or else for your snacks with some peanut butter and jam. Recipe Source: King Arthur Flour
4+1/2cups All purpose flour/Bread flour
1cup Mashed potatoes
2tsp Instant yeast
6tbsp Softened butter
1tsp Salt
2tbsp Sugar
1/4cup Lukewarm milk
Butter (for brushing)
Take the flour, mashed potatoes, instant yeast, butter, salt, sugar and lukewarm milk in a large bowl.
Knead everything well for a while until the dough as a smooth and soft dough. Place the dough in a lightly greased bowl and wrap it.
Let it sit for an hour until the dough turns double. Now punch and deflate the dough, divide it to 12-14 balls, roll each balls as smooth roll.
Place the rolls in a greased rectangular pan, cover the pan and let it sit for an another hour.
Preheat the oven to 350F, bake the rolls for 20-25 minutes until the crust turns golden brown. Put off the stove.
Brush the rolls with melted butter immediately.
Serve rolls warm or at room temperature.
Conserve the remaining rolls in an air-tightened box or in freezer for long storage.

Amish baked goods are always so delicious. They come to the NY farmers markets and sell their delicious pies! the rolls came out so good!
