You may wonder while reading the name of my today's post, yes you read it rite, my today's recipe is a baked version of Idli. If you would have went through my earlier post, you might have noticed that am posting with a super interesting theme calls Pick a breakfast and do it in 3 different ways for this week's blogging marathon. After a lipsmacking sandwich, i want to dish out a different dish with Idli/dosa batter, hence i opted for a baking dish with the same usual idly batter. To make this idli muffins more interesting i opted for a lipsmacking and nutritious rajma masala. Adding rajma masala to this idli muffins makes this dish more delicious with more interesting nutritional values.
This desi muffins are seriously a wonderful dish to make out if you are planning for a get together or else for a party menu as you can bake them easily with less efforts as this dish is definitely a crowd pleaser. You doesnt even need any side dish to enjoy this baked muffins as i have added some rajma masala, obviously this masala is quite enough to enjoy this muffins just like that. However served with spicy chutney; this muffins tastes fabulous also. If you want to make to dish out a simple South Indian breakfast in an interesting way, dont forget to give a try to this incredible Desi Muffins. 2cups Dosa Batter
Rajma Masala:
1cup Rajma (soaked overnite)
1no Onion (chopped)
1no Tomato (chopped)
1/2tsp Fennelseed powder
5nos Garlic pods (crushed)
1/2tsp Red chilly powder
1/2tsp Coriander powder
Salt
Oil
1/2tsp Mustard seeds
Few Curryleaves
Heat oil in a kadai, add the mustard seeds, let them splutters. Add the fennel seed powder and crushed garlic pods, fry until a nice aroma comes from.
Add chopped onion, chopped tomatoes, curryleaves with salt, cook until the vegetables gets well cooked.
Meanwhile pressure cook the rajma with enough water, salt until three whistles,drain the excess of water in a bowl.
Add the cooked and mashed rajma/red kidney beans, cook for a while.
Add the redchilly powder, coriander powder, salt and cook in simmer until the masala gets well cooked. Put off the flame and let it cool completely.
Preheat the oven to 350F, line muffin paper in a muffin tray.
Spoon enough dosa batter to the muffin paper, now drop enough rajma masala.
Bake for 20-25minutes or until a skewer inserted comes out clean.
Serve immediately.

That idli would be great for packed lunches. Don't have to worry about packing a separate chutney or curry :-)

Very innovative and I love the idea of baking.
