Vegan Double Chocolate Mousse with Aquafaba/Vegan Chocolate Mousse

Recently i had an immense pleasure to experiment Aquafaba (the chickpeas cooked liquid/brine) in one of my favourite dessert, as its replace the egg very brilliantly in all your bakes or in desserts. Actually i want to try my hands since a while with this aquafaba but somehow i was bit skeptical about the taste of this 'incredible vegan egg whites'. One fine day, the kindergarden teacher with whom am working prepared a culinary demonstration to the kids. We simply whipped  an egg white and aquafaba separately to explain the kids about making meringue at home. That day,i tasted the whipped Aquafaba and completely fallen in love with this vegan meringue. I was seriously waiting to give a try with this incredible ingredient during my vacation and finally i did.

Vegan Chocolate mousse

If i want to feed something new to my family, i usually start with their favourite ingredient, if its a dessert obviously i'll combine that new ingredient with chocolates, everytime its works. Needless to say why i prepared chocolate mousse with aquafaba. None at home noticed this new ingredient and they enjoyed thoroughly without having any doubt. Later i have told them that i prepared this chocolate mousse with aquafaba, their reactions was million dollars. Oh god, if you would have seen their big eyes, i was laughing like anything. My hubby was totally shocked to know that this mousse are completely vegan as he loved this dessert.Now am ready to dish out some vegan desserts out of this Aquafaba. Am posting this vegan chocolate mousse for this week's blogging marathon as am running Kid's delight- Chocolate as this week's theme.

Vegan chocolate mousse with aquafaba,Vegan chocolate mousse

1cup Aquafaba
1tbsp Sugar
1/2tsp Vanilla extract
100grams Dark chocolate
200grams Milk Chocolate

First,melt the dark chocolate in a bowl over a bain marie or in microwave. Mix well and let it cool while preparing the vegan meringue.

Whisk the aqufaba with pinch of salt for a while, add in the sugar and beat until soft peaks form.

Add in the vanilla extract, beat again for a minute.

Divide the meringue into 3/4th and 1/4th in two large bowls.Add the melted dark chocolate to 1/4th of the meringue and fold it well.

Aquafaba Chocolate Mousse, Vegan dark chocolate mousse

Pour it a serving glass, keep in fridge for half an hour.

Now melt the milk chocolate over a bain marie and let it cool.

Fold the melted milk chocolate to the 3/4th of the meringue, and top the dark chocolate mousse with the milk chocolate mousse.

Arrange in fridge for atleast 4hours.

Serve and enjoy.

Haven't yet tried with aquafaba yet, but would love to try it soon. Chocolate mousse looks so rich and decadent.

That's a good technique to introduce something new to the family. Aquafaba is something I have to try yet.
