I have been baking with sweet potatoes for a while and everytime anything baked with this incredible root vegetable gives excellent baked goodies. The cooked sweet potato puree works awesome if you want to bake eggless breads,cakes or buns. Sweet potato is one among the versatile vegetables, i love to cook with it quite often. You can dish out varieties of foods with this vegetable and you wont regret dishing out many beautiful dishes. My recent trial with sweet potato is this incredible savoury buns, which sounds almost like the popular khara buns. This buns asks for sauteed onions,green chillies, since i ran out of coriander leaves i have completely skipped it, but still you can add this herbs if you have them. This cute buns makes excellent burgers, or else to make a sandwich with your favourite spread or grilled meat. You can serve these buns to have along with a bowl of warm, comforting soup.However this buns are seriously interesting to have along with your cup of tea with spicy spread or herbed cream cheese.
Just love the flavour of the sauteed onions in this buns. You cant just stop with one bun, when served along with herbed cheese or cream cheese needless to say that you cant keep urself away from this spongy buns. The sweet potato puree will definitely gives a beautiful colour to this buns. Also it gives a mild sweetness to this bread, obviously if you want to increase the spice level, just add more chilly or chilly powder.However if you give a try to this buns,am sure you will make it quite often. 3cups All purpose flour
1/2cup Cooked & mashed Sweet potato
1tsp Salt
1/2tsp Sugar
1tsp Instant yeast
3tbsp Butter
1cup Onion (chopped)
1/2tsp Garam masala powder
1no Green chilly (chopped)
Oil for cooking
Black poppy seeds (as per need)
Milk (for brushing)
Heat oil in a pan, add the chopped onions, green chilly and garam masala powder and saute everything well until the onions turns transculent.
Take the flour, mashed sweet potato puree,salt, sugar and yeast in a bowl. Add the lukewarm water (as per need), sauteed onions-green chillies and knead everything well.
Slowly add in the butter and knead again everything as a soft and smooth dough.
Arrange the dough to a greased bowl and keep in a warm place for atleast an hour, covered with a towel.
Once the dough doubles the volume, punch the dough and divide it as a 7-8 pieces.
Roll it nicely as small balls,arrange over a baking sheet lined over a baking tray and arrange again in warm place for an hour or 45minutes.
Brush the buns with milk and sprinkle black poppy seeds as per need.
Preheat the oven to 350F and bake the buns for 30-35minutes until the crust turns golden brown.
Let it cool completely .
Enjoy.
