I have already tried many varieties of cookies but still they do exist many which are quite creative, interesting, cute and effortless cookies. One of my recent bake is these attractive shaped cookies aka Colour Pencil cookies. Actually i baked this cookies for an event, as a member of this baking group i baked this colour pencil as this event goes for weekly baking. When i saw this colour pencil cookies, i couldnt resist myself to bake some. Obviously i opted for an eggless version though the original recipe calls for an egg yolk. However even without egg, this cute cookies came out absolutely buttery.
Kids enjoyed thoroughly this cuties with their favourite drink, needless to say this cookies are super dangerously addictive. Trust me, if you are planning to make this cookies, dont forget to make them in huge batch else you will definitely regret.Though i baked a box of these cookies, they just vanished very quickly within few minutes. Apart from food colour, this cookies goes for basic ingredients and these buttery cookies will definitely satisfy your tastebuds.An excellent evening snack to enjoy thoroughly with your usual cup of tea or coffee. 3/4cup Butter
1cup Icing Sugar
3tbsp Curd
1tsp Vanilla extract
2+1/2 cups All-purpose flour
1/2tsp Salt
Line up a baking tray with baking sheet and keep aside.
Pre-heat oven to 350F. Sift together flour and salt and keep aside.
Add butter and icing sugar together in the bowl of your electric beater. Beat on medium speed until the mixture becomes creamy.
Add the curd, vanilla extract and beat again until combined.Now add the flour and beat on slow speed until flour gets well mixed.
Do not over beat. Use your hands to bring the dough together and divide into two halves.
Divide again one of the half dough into 4 equal sized portions.
Add drops of different colours to each of the portions of dough.
Knead well the colour to the dough completely.
Dust the work surface with flour and roll the uncolored portion of the dough into a rectangle.
Pinch out 2 to 3 small sized portions of each coloured dough and make a sausage like log of 3 mm diameter 4 to 5 inches long.
Place each coloured sausage in one corner of the uncolored rolled out sheet of dough.
Wrap the coloured dough and close it well with the uncoloured dough.
Cut it where it covers and pull it to work.
Roll it smoothly using your fingers and seal well the edges.
Repeat the same with the remaining dough. Transfer them carefully to the already prepared baking tray.
Bake in the preheated oven for 15 minutes . Cool on wire rack
Let it cool completely.
Once completely cool, use a blade or kitchen knife to sharpen the cookies. Hold a cookie using the index finger of your left hand and start sharpening.
Do it gently else you will break the cookies.
Enjoy these buttery and dangerously cookies. Store them in an air tightened box.
