Babypotatoes Fenugreek Leaves Curry/ Aloo Methi Sabzi

Baby potatoes, these tiny potatoes are my lil one's favourite. Whenever i'll pick these cuties from my near by vegetable stall, i know i'll be making some masala just to satisfy my lil darling's tastebuds. But this time i tried adding some bitterness to these potatoes,yes i prepared a delicious but mildly bitter curry with both baby potatoes and freshly plucked fenugreek leaves which is from my small balcony garden. When its summer here, i'll try my hands to grown up few herbs myself and this time i went for mint,coriander and obviously fenugreek leaves. Freshly grown fenugreek leaves gives an excellent flavour to this delicious potato curry.

We enjoyed thoroughly this dish with sambar rice for our lunch, both sambar rice and this mildly bitter potato curry makes a prefect pair. Also we had the leftover aloo methi sabzi with rotis for our dinner, yes this curry goes very well as side dish along with our humble rotis. This dry potato curry can be prepared in a jiffy and if you dont get baby potatoes just get your usual potatoes to make it.Potatoes in any forms is almost everyone's favourite, there is nothing harm to add this bitter fenugreek leaves while making this simple potato curry. Personally sneaking methi leaves this way is definitely the best method i have found to feed my family.

Aloo methi Sabzi, Potato fenugreek leaves curry,Vegan Potato curry


15nos Baby potatoes
2cups Fresh fenugreek leaves
1/2cup Chopped onions
1tbsp Crushed garlic
1/2tsp Cumin seeds
1tsp Chopped green chillies
1tbsp Coriander powder
1/2tsp Red chilly powder
1/4tsp Asafoetida powder
1/4tsp Turmeric powdr
Salt
Oil

Heat enough oil in a pan, let crack the cumin seeds, add in the crushed garlic, chopped green chillies, fry until a nice aroma comes.

Add in the chopped onions, salt,cook until the onions turns transculent.

Now add the cooked,peeled baby potatoes, fry for few minutes.

Add the chopped fenugreek leaves, coriander powder, chilly powder, turmeric powder, asafoetida powder, saute everything until the potatoes gets well coated.

Cook covered for few minutes in simmer, dont forget to stir occasionally.

Once the potatoes gets well coated with the spices and greens,put off the stove.

Serve hot as side dish.
