Kattuyanam, this is one of the variety of rice cultivated in South India especially in Tamil Nadu. Kattuyanam is one among the traditional rice varieties.Kattuyanam, this rice variety help peoples to control diabetics, usually people used to consume kasayam made out of this rice bran but still you can also make idlies,dosas out of this incredible grain.Its seems there are more than five thousand varieties of rice was available in Tamilnadu. But currently we are able to save nearly 200 varieties, each rice variety is unique in their own way. Some varieties of rice grow even without water, some can stand flood and some can stand heavy winsds. Somehow high nutritional value rich traditional rice varieties started loosing their existence slowly when peoples started consuming the usual raw rice. Thank god, now Organic farmers are there to bring more traditional rice varieties for the benefit of us.
Kalpana of Life of spices, was kind enough to buy few packets of orangic grains from her favourite organic store and gave me a huge bag of those healthy organic stuffs when i met her in Chennai. Seriously its was like winning few lakhs for me, thanks Kalpana without you i would have never heard of this healthy rice variety.I came back to Paris with all those packets, slowly started cooking with them. I tried making these healthy steamed rice cakes aka idlies with those Kattuyanam variety of rice, they came out extremely fantabulous. If you are able to see this variety of rice in your nearby organic store dont forget to get them and dont forget to support the farmers and the organic shops as they are taking much efforts to bring back this almost forgotten rice variety to us.Sending to my own event Healthy Diet- Healthy Breakfast guest hosted by Nandoo's Kitchen.
1cup Kattuyanam rice
1cup Brown rice
1/2cup Urad dal
1/2tsp Fenugreek seeds
Salt
Wash and soak the Kattuyanm rice and whole urad dal with fenugreek seeds separately for atleast 4 hours.
Grind as bit coarse slightly as thick batter with enough water in a grinder.
Add enough salt, mix well and keep it for fermentation overnite.
The next day while making idlies, give a stir to the fermented batter.
Pour enough fermented idly batter to the greased idly plates and cook in idly cooker for 10-15minutes..
Serve this healthy idlies with any sort of spicy chutneys or sambhar.
