After an authentic Hyderabadi dish, we are landing to Assam for this month's Indian Cooking Challenge, actually Assamese cuisine is quite new for me which i seriously want to learn more. When Srivalli chosed Kordois, a crispy evening snacks from Sunita's space i was really excited to try this snacks which ressembles quite like Andhra's panasa thonalu which means jackfruit buds in Telugu. Sunita shared two versions of kordois, but my choice went directly to the sweet version, since we are all sweet tooth at home. However i'll make some the savoury too very soon.
Definitely this challenge is seriously very interesting and easy, kordois is often made during a festival called Bihu in Assam. Do you know 'Kordoi' is star fruit in Assamese, this snacks tastes fabulous as an evening snacks with a cup of tea. We couldnt stop yourselves munching these beauties, i have already prepared twice at home, especially my kids are great fan of this kordois.
2cups All purpose flour
2tbsp Oil
1/4tsp Salt
Water to knead
Oil for frying
A pinch Kalonji seed
Sugar syrup:
1+1/2cup Sugar
1/2cup Water
Take the flour,oil,salt in a bowl, slowly add water and knead everything to form a elastic and stiff dough.
Keep aside for half an hour.
Pinch down the dough as small balls and flatten them.
Roll a ball as a circle, with a sharp knife cut straight line, take care not to cut all the way through.
From an end start to roll by pinching the ends to bind.
Push the two ends of the kordois gently to plump the middle.
Place it in a tray,cover with a wrap.. Finish the remaining balls as kordois.
Deep fry the kordoi till crisp and drain the excess of oil with a paper towel.
Meanwhile, take the sugar and water in a thick bottomed pan and bring it to boil.
If you the syrup is sticky, put the heat to simmer, drop the already fried kordois into the syrup, one at a time.
Turn them gently to get well coated with the syrup.
Remove the kordois from the syrup and let them cool completely.
Store the kordois in an air tightened box.
Enjoy..

This sounds and looks scrumptious.
This remind me of karela (deep fried snack made with all purpose flour and coated with spices). Sweet version is new to me. I will try it.

ths has a close relation with our snack which we call Khaja... shape is also similar bt slightly different.. we make it both salty and sweet
