Wishing you all a safe and happy diwalis friends..After a long hesitation i prepared this nutty and delicious sweets called Chandrakala for this year's diwali sweets..This chandrakala brings me many beautiful memories, yep in Pondicherry this sweets will be sold only in Ashram sweets before,near the beach road, my dad gets this sweets specially for us quite often for diwali, it has been ages i had them and i have completely forgotten about this sweets, before few days while talking with my mom we talked about our old diwali sweets and celebrations and immediately this chandrakala sweets came up in our discussion..This time i wanted to give a try to this delightful sweet and they came out super prefect..Needless to say, my teddies didnt stopped enjoying this sweets and i want to share with u all this beautiful sweets which makes me nostalgic..Since this sweets looks like half moon, its called as chandrakala, if u make them as round shaped sweets, the name will get changed and its called as Suryakala.
2cups Maida/All purpose flour
1/4tsp Baking powder
2tbsp Ghee
2cup Sugar
1cup Khoya
1/2cup Mixed nuts (almonds, cashews, pistachios)
Oil
Make a sugar syrup of one string consistency with two cups of sugar and a half cup of water, keep aside..Mix the khoya with finely chopped nuts and make it as small balls for stuffing the chandrakala..
Now take the maida, ghee, baking powder and knead the dough as soft and smooth dough ,keep aside atleast for an hour..make small sized balls from the dough and roll out as thin,flat chappathis(u can dust the dough in case if its hard to roll thin), place the stuffing inside and fold as semi circle, stick the sides by twisting the dough inside at the corners, deep fry the chandrakalas until golden brown, remove and put into the prepared sugar syrup, let them sit for 2 minutes..Remove the chandrakalas and let them sit for an hour before u arrange them in air tightened box...
