Sweet Potato N Chickpeas Cutlet

Sweet potato are really versatile also very much ideal fare for the health conscious food consumer. With the ever-growing interest in health and natural foods, the sweet potato is quickly finding its place in the family weekly diet the year around. The sweet potato blends easily with herbs, spices and flavorings producing delicious dishes of all types. From processed baby foods to the main dishes, casseroles, salads, breads and desserts, sweet potatoes add valuable, appetizing nutrients and color to any meal.Wash cured sweet potatoes and bake or boil until slightly soft. If boiled, drain immediately. Thoroughly cool the baked or boiled sweet potatoes. Wrap individually in freezer film or foil and place in plastic freezer bags. Seal, label and freeze.A freshly baked or boiled sweet potato is delicious and nutritious. Sweet potatoes can be baked, boiled, fried, broiled, canned or frozen. They can also be cooked in the microwave oven.Before cooking sweet potatoes, scrub skin and trim off any bruised or woody portions.Sweet potatoes provides beta carotene which may be a factor in reducing the risk of certain cancers. I have prepared this cutlet with sweet potato and canned chickpeas for our sterday's lunch, this is my first dish with sweet potatoes, i never ever tried anything with sweet potatoes, i was quite anxious to try out this cutlet initially but for my surprise they turned out superb and too delicious...Sending this delicious cutlet to Sunday Snacks-Spill the beans guest hosted by Priya of Akshayapaatram...


1no Sweet potato (medium size)
1/2cup Chickpeas(canned)
1no Onion (chopped)
1/4tsp Fennel seed powder
1/2tsp Red chilly powder
1/4tsp Garam masala powder
Salt
1/4cup Bread crumbs
2tbsp Corn flour
Oil

Peel and chop roughly the sweet potato, cook until they get well cooked in enough water and salt...drain the cooked water and mash the cooked sweet potato pieces, heat a few spoon of oil and cook the chopped onion until they turns transculent...mash coarsely the canned chickpeas..now add the cooked onions, mashed chickpeas, red chilly powder, fennel seed powder, garam masala powder and salt to the already cooked sweet potato pieces and turn them as dough..

Make 10-12 balls and flatten it as cutlets..Mix the corn flour with enough water as white paste..dip each cutlets in white sauce and roll it evenly in bread crumbs, fry as shallow frying until both sides of the cutlets turns brown...drain the excess of oil in a paper towel..

I have only had sweet potatoes just boiled and that too in India when i was younger.
Why didn't i know then we could make cutlets.
