Shahi Paneer

Shahi Paneer, rich and creamy paneer dish with paneer cheese cubes, creamy sauce prepared with cashews or almonds, thick yoghurt and with onion and tomato puree.. its a tasty, spicy and very delicious paneer dish can be served very well with rotis and parathas..Paneer is a cottage cheese and shahi means royal, so this is royal cheese dish..Shahi paneer is a punjabi dish, most popular in northen part of India..I just love paneer and i had this shahi paneer for the first time in indian restaurant, initially i dont want to take..i really took this dish for a trial but finally i loved this shahi paneer, whenever i buy a pack of paneer from Indian groceries, i always wish to prepare this shahi dish, after a long i tried this delicious creamy dish sterday and we just loved this rich creamy dish with naans, i prepared naans without yeast which i tried and tasted from Rak's Kitchen, will post very soon the delicious naan..This paneer dish goes to Jay's Letz Relishh-Paneer..

1cup Paneer cubes
1cup Thick yoghurt
8nos Cashew nuts
1cup Milk
1/4tsp Cumin seeds
1/4tsp Caraway seeds (shah jeera)
1/4tsp Turmeric powder
1/2tsp Red chilly powder
1/2tsp Coriander powder
Salt
Oil

To Grind:
3nos Onion(chopped)
3nos Tomatoes(chopped)
3nos Garlic cloves
2tsp Ginger pieces
1/2tsp Caraway seeds (shah jeera)
2nos Cloves
1/2inch Cinnamon stick
1/4tsp Nutmeg powder
6nos Black peppercorns
1no Green chilli

Soak cashew nuts in hot water for half an hour, grind as fine paste with yoghurt,, milk and keep aside...saute the chopped onions, chopped tomatoes with a tsp of oil and keep aside..grind this sauteed onions and tomatoes with all the ingredients from the list 'To Grind' as fine paste..fry the paneer cubes in a tsp of oil until they turns slightly brown on both sides, drop this fried paneer cubes in hot water..

Heat the 3tbsp of oil and add the cumin seeds and shah jeera, let them splutters, add the grounded paste along with turmeric powder, redchilly powder, salt and coriander powder, fry everything in medium high flame and add finally the fried paneer cubes with grounded cashew paste...keep in simmer cook until the gravy get slightly thickens..garnish with chopped coriander leaves..

Serve hot with naans, rotis and parathas!

Love the look when the gravy forms a silky rich coating over the tofus... does adding the cashews and yogurt make it "Shahi"... always wondered what that name meant.

Whenever there is festive season or marriage season around, i get sick of eating paneer but as soon as life is back to monotony,i crave for some .......Nice recipe, much different from what i generally make(fed up of same way of cooking), so wanna try this way :-)
