Red Velvet cake or cupcakes is a cake with either a dark red, bright red or red brown colour, its can be prepared as layer cake or simply as individual cupcakes topped with cream cheese icing. The red colour of this red velvet cake or cupcakes is often prepared by adding beetroot or red food colouring. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Shazzy and she suggested Red Velvet cake,Red Velvet cheesecake and oreo stuffed red velvet crinkles along with vegan version. Obviously i picked red velvet cake and baked them as cupcakes instead of making a cake also i halved the quantities given in the original recipe. Trust me these cuties are dangerously addictive and we loved having with our cup of tea for our evening snacks while my kids enjoyed having these cuppies with their cup of milk. We couldnt resist licking the cream cheese frosting.
Cupcakes or cakes, these red velvet bakes are seriously very attractive and you cant stop yourself having them.Apart from red food colouring, these cupcakes goes really for easy ingredients, if dont like or dont want to use red food colouring, you can replace them very well with beetroot puree which gives an excellent red colour to this bakes.Am running my 2nd week of blogging marathon with evening snacks as theme,obviously for the next two days i'll be posting different evening snacks.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#40.
Recipe Source: Sprinkle Bakes
1+1/4cup All purpose flour
1/2tsp Salt
1cup Sugar
1/2cup Butter (room temperature)
1no Egg
1/2tbsp Cocoa powder
1tsp Liquid red food colour
1/2cup Butter milk
1/2tsp Vanilla extract
1/4tsp Baking soda
1/2tbsp Apple cider vinegar
Preheat the oven to 350F,line muffins paper in a muffin pan,keep aside.
Sift the flour with salt, keep aside. beat the butter and sugar together until they turns fluffy and light.
Add the egg, mix well, add the flour gradually by alternating with the buttermilk, blend in the vanilla extract.
Meanwhile in a bowl, add the food colour,cocao powder,mix to form a paste.
Add the sugar to the flour mixture, mix well.
In a small add the baking soda and cider vinegar,keep aside until they turns foamy.
Add this cocoa-food colour paste, foamy baking soda-vinegar mixture and blend everything well.
Spoon the batter to the already prepared muffin pans, batter will be thick, dont forget to level the top of the batter.
Bake for 20-25minutes until a skewer inserted comes out clean.
Let them cool completely in a wire rack.
Cream cheese frosting:
1/2cup Butter
1/4cup Cream cheese (i used philadelpia)
1tsp Vanilla extract
2cups Confectioner's sugar
Beat the cream cheese,butter, vanilla until they turns smooth, gradually add the confectioner's sugar and beet until the mixture turns light and fluffy.
Spoon the frosting or pipe the frosting as you desire.
Enjoy for evening snacks.
